Malabar Beef Curry

Servings: Serves 4-5 ppl


Ingredients

  1. 3 lb Beef Chuck roast (or) any Stew Meat would work.
  2. 2 onions 
  3. 2-4 tsp of Coconut Oil
  4. 4 large/5 small tomatoes 
  5. 2 tbsp Turmeric Powder 
  6. 4 tsp Coriander Powder 
  7. 3 tsp Cumin Powder
  8. 5 Garlic Cloves
  9. 1tsp of Ginger Root
  10. 1/2 tsp Urad Dal 
  11. 1/2 tsp Channa Dal
  12. 100g Cilantro 
  13. Few Curry Leaves
  14. 1/2 Tbsp Cumin powder 
  15. 1/2 Tbsp Red Chilli Powder 
  16. 5 Tsp Bone Broth (Optional)
  17. 100g of Grated unsweetened Coconut flakes.
  18. Salt and Pepper for taste 

Preparation 

  1. Saute the finely chopped onion until they are caramelized in coconut oil. Add a pinch of salt and turmeric to the onion halfway through. 
  2. Then add the chopped tomatoes, curry leaves and other dry spices (Coriander Powder, Chilli Powder, Cumin Powder)  listed above and saute until the raw smell disappears.
  3. Make a paste of coconut flakes, ginger, garlic, little cilantro leaves and add this mixture to the pan and saute until the raw smell disappears.  Add oil if needed to prevent the burning of spices at the bottom. 
  4. At this stage, we should start seeing the oils oozing out of the sides of the mixture.
  5. Now at this stage, lower the heat and add the chuck roast roughly cut into medium to large-sized chunks. Saute it for few mins until they are well coated in the mixture. 
  6. Add the optional bone broth ingredient.
  7. Then pressure cook it for about  2 hours or in a slow cook mode for 5-6 hours. 
  8. To make sure the beef is well cooked, take a fork and pierce it, the beef has to be tender and fall should fall apart easily.
  9. Finally, garnish with fresh cilantro leaves for extra flavor and serve hot!

Serving Ideas

  1. To keep it low-carb, its best paired with a side of curry-flavored cauliflower rice. 
  2. If now low-carb, it can be paired Jasmine/Basmathi rice sauteed in Ghee.

Meal Prep Options

  1. It can be stored in the fridge, for about a week-10 day covered air-tight.
  2. It can be reheated in a pan/microwave.
