Creamy Buttery Scallops

Serves: 3 People



Ingredients

  1. 1lb Scallops
  2. 200 ml of Heavy Cream or Heavy Whipping Cream 
  3. 8 Bacon Strips 
  4. 4oz of Parmigiano Reggiano or Pecorino Romano 
  5. 3 Garlic cloves 
  6. 2 tbsp of butter
  7. 3 tbsp Avocado Oil
  8. 1/2 White Onion 
  9. 200g of Cremini Mushrooms (Optional)
  10. Rosemary, Thyme (Dry or Fresh)
  11. Parsley for garnishing
  12. Salt and Pepper for Taste 


Method


  1. Pat dry the scallops nicely and season it well with Salt and Pepper. 
  2. To a hot pan, add 1 tbsp of butter, 2 tbsp of avocado oil, and cook the scallops for about 1.5 minutes totally. Scallops tend to cook very fast, so it is recommended not to cook it for more than the recommended duration.
  3. Cook the bacon in an oven at 350F for 15 minutes and crumble it into tiny pieces. 
  4. To the same pan, add 2 tbsp of butter and 1tbsp of avocado oil, caramelize the onions. (Protip: Add a pinch of salt to caramelize the onions faster)
  5. Add crushed garlic, rosemary, thyme, and chopped mushrooms, and saute until the raw garlic smell disappears and mushrooms are cooked. Season with pepper. 
  6. Now, add heavy cream and grated cheese and bring the entire mixture to a simmer, so as to thicken the sauce. 
  7. At this stage, add the seared scallops, bacon and adjust the salt and pepper (NOTE: Beware of the salt since there is salt in cheese, scallops, and bacon). 
  8. Garnish it with parsley and the dish is ready.

Meal Prepping

  1. The scallops will taste good for about 2-3 days in the fridge and tastes best when served hot.
  2. The bread lasts in the fridge for about 7 days when stored in an air-tight container.
